Apple Snow - cooking recipe
Ingredients

6 medium apples
1/4 c. water
1/3 c. sugar
3 egg whites, stiffly beaten
juice and rind of 1/2 lemon
1/2 pt. heavy cream, whipped
6 medium apples, sliced
2 c. water
2 c. sugar
sponge cake
Preparation

Pare and core apples.
Cook 6 apples in 1/4 cup water until soft.
Rub through sieve; add 1/3 cup sugar.
Fold in egg whites, lemon and cream.
Simmer apple slices in 2 cups water and 2 cups sugar until transparent, but not soft.
Crumble sponge cake; place in 8 serving dishes.
Heap with apple slices; top with Snow mixture.
Chill and serve.
Makes 8 servings.
