Tofu-Cheese-Stuffed Shells(Yields 4 Servings) - cooking recipe

Ingredients
    12 jumbo pasta shells
    1/4 c. shredded carrots
    2 Tbsp. sliced green onions
    8 oz. tofu
    1/2 c. low-fat Ricotta cheese
    1/2 c. shredded Mozzarella
    1 beaten egg white
    16 oz. can tomatoes, cut up
    3 oz. tomato paste
    1 tsp. dried basil, crushed
    1 tsp. dried oregano, crushed
    1/2 tsp. sugar
    1/4 tsp. garlic powder
    1/4 tsp. fennel seed, crushed
Preparation
    Cook pasta shells according to package directions.
    Drain. Rinse with cold water.
    Set aside.
    Meanwhile, in a small saucepan, cook carrot and green onion in small amount of water until tender.
    Drain.
