Vegetable Rice - cooking recipe

Ingredients
    1/2 c. chicken broth
    2 Tbsp. shredded carrot
    2 Tbsp. finely chopped celery
    1 Tbsp. sliced onion (small green onions are best)
    1 tsp. margarine or butter
    1/8 tsp. salt
    dash of pepper
    1/2 c. uncooked instant rice
    1 Tbsp. chopped cashews (optional)
    1 Tbsp. chopped fresh parsley
Preparation
    In a small saucepan, combine chicken broth, carrot, celery, onion, margarine, salt and pepper.
    Bring to a boil.
    Remove from heat.
    Add rice.
    Cover; let stand 5 to 8 minutes or until liquid is absorbed.
    Garnish with cashews and parsley.
