Crunchy Orange Gelatin Salad - cooking recipe

Ingredients
    2 (3 oz.) pkg. orange sugar-free Jell-O
    2 (8 oz.) cans crushed pineapple, drained
    5 to 6 finely grated carrots
Preparation
    Drain pineapple, reserving juice.
    Follow directions for making Jell-O using the pineapple juice for some of the liquid.
    Pour prepared Jell-O in a 9 x 13-inch dish and set aside to cool.
    Grate carrots very fine.
    Add carrots and pineapple to cooled Jell-O and refrigerate.
    Cut in squares and serve on lettuce.
    Top with Cool Whip.
