Potato Soup - cooking recipe
Ingredients

1 Tbsp. fat
4 large potatoes, diced
1 onion, chopped
1 pimento, minced
1 Tbsp. minced parsley
4 c. stock or water
1 Tbsp. paprika
1/2 tsp. salt
3 Tbsp. sour cream
Preparation

Melt fat in a saucepan.
Add potatoes, onion and pimento. Simmer until onion begins to brown, then sprinkle with minced parsley.
Add hot stock or water.
Stir in paprika.
Season with salt.
Simmer about 30 minutes.
Add 1 tablespoon sour cream and cook 3 minutes longer.
Remove from heat.
Add remaining sour cream.
Serves 6.
