Italian Wedding Soup - cooking recipe

Ingredients
    1/2 lb. ground chuck
    1/4 c. fine, dry bread crumbs
    1 Tbsp. grated Romano cheese
    1/4 tsp. salt
    1/4 tsp. pepper
    1 egg white
    8 c. water
    3 (6 oz.) skinned chicken breast halves
    1 c. loosely packed spinach leaves
    3/4 c. sliced celery
    3/4 c. peeled, seeded and chopped tomato
    2/3 c. thinly sliced carrot
    1 large onion, quartered
    3/4 tsp. salt
    1/8 tsp. pepper
Preparation
    Combine first 6 ingredients in small bowl and stir well. Shape mixture into 56 (3/4-inch) meatballs.
    Set meatballs aside.
