Ingredients

6 Tbsp. olive oil
1/4 c. finely chopped onion
1 clove minced garlic
1 c. tomato juice
1 egg, beaten
2 c. flour
2 3/4 tsp. baking powder
3/4 tsp. salt
1 tsp. dried oregano
1 1/2 c. Mozzarella cheese, grated
1/2 c. finely chopped pepperoni
1/2 c. Parmesan cheese
Preparation

In 2 tablespoons oil, saute onion and garlic.
In a bowl, mix sauteed mixture with tomato juice and egg.
In another bowl, combine flour, baking powder, salt, oregano and 1 cup of cheese. Quickly stir wet ingredients until moistened.
Spoon into oiled muffin cups, and sprinkle tops with remaining cheese.
Bake at 400\u00b0 for 20 minutes.
Don't overbake.
