Golden Potatoes - cooking recipe

8 medium potatoes
1/2 stick butter
2 c. shredded Cheddar cheese
2 c. sour cream
1/3 c. green onions, chopped
1 tsp. salt
1/4 tsp. pepper
2 Tbsp. butter
Preparation

Boil the potatoes in skins until almost done; chill slightly, then remove skins and grate potatoes into a large bowl.
In medium saucepan, combine 1/2 stick butter and cheese until almost melted. Remove from heat and stir in sour cream, onions, salt and pepper. Pour over potatoes.
Stir lightly and turn into a buttered 2-quart casserole.
Dot with butter and sprinkle with paprika. Bake 30 to 40 minutes at 350\u00b0.
Can be made the day before and then baked.
