Eggplant Casserole - cooking recipe
Ingredients

1 eggplant, peeled and quartered
1/2 c. milk
1 small chopped onion
1 1/2 c. bread crumbs
2 slices bread
2 beaten eggs
1 1/2 c. grated cheese
dash of salt and pepper
Preparation

Preheat oven to 400\u00b0.
Boil peeled and quartered eggplant in salt water until tender.
Soak 2 slices of bread in milk.
Mash eggplant with bread.
Add eggs, onion, salt and pepper.
Mix cheese with this and put in greased casserole dish. Sprinkle with bread crumbs. Bake at 400\u00b0 for about 45 minutes.
