Vegetable Lasagna - cooking recipe
Ingredients

2 c. low-fat cottage cheese
1 (10 oz.) frozen chopped spinach, thawed
1 c. shredded carrots
1/2 c. Egg Beaters
2 Tbsp. minced onions
1 tsp. Italian seasoning
2 c. no-salt spaghetti sauce
9 lasagna noodles, prepared without salt
1 c. shredded Mozzarella cheese (4 oz.)
2 Tbsp. grated Parmesan cheese
Preparation

In medium bowl, combine cottage cheese, spinach, carrot, Egg Beaters, onion and Italian seasoning.
Set aside.
