Zucchini Casserole - cooking recipe

Ingredients
    4 oz. sour cream
    1 can cream of mushroom or celery soup
    1/2 pkg. Pepperidge Farm stuffing mix or equivalent
    2 shredded carrots
    1 small onion, grated
    3 c. (plus) zucchini, cubed
    1 stick (1/2 c.) butter, melted
Preparation
    Mix butter and stuffing mix together.
    Cook zucchini in boiling water for about 2 to 3 minutes and drain.
    Toss 1/2 stuffing mixture, zucchini and other ingredients together.
    Pour into casserole dish.
    Top with remaining stuffing mix and bake, uncovered, for 30 minutes or until bubbly in a 350\u00b0 oven.
