Cream Of Broccoli Soup - cooking recipe
Ingredients

2 Tbsp. butter
2 Tbsp. flour
1 bunch (10 oz.) fresh broccoli
1 small onion, finely chopped
2 Tbsp. butter
1 qt. chicken broth
1 c. heavy cream, warmed
salt and pepper to taste
Preparation

Melt butter in saucepan.
Stir in flour.
Cook 3 minutes over low heat.
Wash, drain and chop broccoli.
Saute onion in remaining butter.
Stir in broccoli.
Cook 5 minutes.
Stir in broth; heat to simmering.
Add butter-flour mixture, mixing until smooth.
Simmer 30 minutes.
Stir in warmed cream and serve.
(Add 5 slices American cheese for Broccoli-Cheese Soup.)
