Eggplant Patties - cooking recipe

Ingredients
    1 medium eggplant, pared and cubed
    1 1/4 c. cracker crumbs
    1 1/4 c. (5 oz.) shredded sharp cheese
    2 eggs, slightly beaten
    2 Tbsp. sliced scallions
    1 clove minced garlic
    1/2 tsp. salt and pepper
    2 Tbsp. cooking oil
Preparation
    Pierce skin of squash about 4 times.
    Cook whole squash 8 to 10 minutes until soft to touch.
    Cut in half; remove seeds. Season or fill with desired filling.
    Cook covered 5 to 6 more minutes.
