Chuck-Wagon Cabbage And Apples - cooking recipe

Ingredients
    2 Tbsp. bacon drippings or vegetable shortening
    1 medium onion, finely chopped
    1 head red cabbage, cut into small pieces
    3 tart apples, unpeeled, cored and cut into 2-inch pieces
    1 Tbsp. lemon juice
    1 1/2 Tbsp. sugar
    1/2 tsp. salt
Preparation
    Heat the bacon drippings in a 12-inch cast-iron Dutch oven over medium heat on the stove top (or a fire or hot coals).
    Add the onion and cabbage.
    Cook, covered, over just enough heat to steam the cabbage for 25 to 30 minutes, or until tender.
    Stir occasionally to keep the onion from browning too much.
    Stir in the apples, lemon juice, sugar and salt.
    Cover and continue to cook over low heat for another 25 to 30 minutes, stirring occasionally, until the apples are soft and cooked down.
    Serves 10 to 12.
