6 smashed peaches
1 c. sugar
3 eggs or Egg Beaters
1 1/2 c. sugar
2 Tbsp. plain flour
1/2 tsp. salt
1 qt. 1% milk
1 large container Lite Cool Whip
1 Tbsp. vanilla extract
Preparation

Combine peaches and 1 cup sugar; stir well and set aside.
Beat eggs until fluffy.
Combine 1 1/2 cups sugar, flour and salt; stir well.
Gradually add sugar mixture to eggs, beating until thick. Add milk; mix well.
Pour egg mixture in large saucepan.
Cook over low heat, stirring constantly, until mixture coats spoon, about 15 minutes.
Remove from heat and cool.
Fold in Cool Whip and vanilla.
Add peaches, stirring well.
Pour into chilled freezer can of 4 gallon freezer.
Freeze according to instructions.
Let ripen at least 1 hour.
