Reuben Casserole - cooking recipe

Ingredients
    2 c. cooked rice
    8 oz. can sauerkraut, rinsed and drained
    12 oz. can corned beef, diced
    1 c. Swiss cheese
    1/2 c. mayo
    3 Tbsp. sweet pickle relish
    1 tsp. prepared mustard
    salt and pepper
    1 medium tomato, peeled and sliced (or canned)
    1/2 c. rye bread crumbs (1 slice)
Preparation
    Combine rice, sauerkraut, corned beef and 1/2 cup of cheese in mixing bowl.
    Mix mayo, pickle relish, mustard and salt and pepper.
    Stir into rice mixture.
    Turn into shallow 2-quart casserole dish.
    Arrange tomato slices on top.
    Sprinkle with remaining cheese and top with bread crumbs.
    Bake at 350\u00b0 for 30 minutes or until hot and bubbly.
