Darlene'S Special Burritos - cooking recipe
Ingredients

2 medium potatoes, boiled or microwaved whole with skin on)
1 lb. ground beef
1 medium onion, chopped
3 to 5 fresh jalapeno peppers, chopped
salt and pepper to taste
1/4 tsp. garlic powder
2 pkg. large flour tortillas (Azteca or Fontova)
oil for deep frying
Preparation

Brown ground beef with seasonings.
Add onion and jalapenos and simmer until onion is transparent.
Meanwhile, peel and grate potatoes.
Add potatoes to meat mixture.
Mix well and simmer for about 5 minutes.
Drain well.
Heat tortillas in oven or microwave for 2 minutes.
Place several tablespoons of meat mixture in center of tortilla.
Fold edges up envelope fashion and secure with a wooden toothpick.
Burritos should be square when folded. Place burrito carefully into hot oil in large skillet until golden brown on both sides and crispy.
Place on paper towels to drain. Serve hot with salsa!
