Clam Fritters - cooking recipe

Ingredients
    12 clams
    1 c. all-purpose flour, sifted
    1 tsp. baking powder
    1/2 tsp. salt
    1/8 tsp. pepper
    dash of nutmeg
    2 eggs, beaten
    1/3 c. milk
    2 tsp. melted butter
    oil for deep fat frying
    lemon wedges
Preparation
    Wash and open clams.
    Drain clams and reserve 1/3 cup liquid. Split clams and discard dark stomach contents.
    Put clams through food chopper; set aside.
    Add baking powder, salt, pepper and nutmeg to flour and sift again.
    Add clam liquor, beaten eggs and milk and beat until smooth.
    Fold in melted butter and chopped clams.
    Drop by tablespoons into deep fat heated to 375\u00b0.
    Fry until brown.
    Drain on paper towels.
    Serve hot with lemon wedges.
