Chickpea And Tomato Stew - cooking recipe

Ingredients
    6 medium-sized tomatoes
    1/2 c. olive oil
    2 medium-sized onions, peeled and chopped
    4 cloves garlic, peeled and minced
    2 c. boiled, drained chickpeas or drained canned chickpeas
    1/2 c. very finely chopped fresh parsley
    1/2 tsp. dried thyme
    1 tsp. salt or to taste
Preparation
    Drop the tomatoes into boiling water for 15 seconds.
    Remove with a slotted spoon and peel.
    Mince the tomatoes.
