Chicken And Artichoke Casserole - cooking recipe
Ingredients

3 to 3 1/2 lb. chicken, cut up
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. paprika
4 Tbsp. butter or margarine
1 (14 oz.) can artichoke hearts, drained and halved
1/4 lb. mushrooms, sliced
2 Tbsp. flour
2/3 c. chicken broth
3 Tbsp. dry sherry
1/4 tsp. rosemary
Preparation

Rinse chicken and pat dry.
Sprinkle with salt, pepper and paprika.
In frypan, brown chicken pieces in melted butter. Transfer chicken to a shallow 3-quart casserole and arrange artichokes in between.
Set aside.
Drain all but 3 tablespoons drippings from frying pan; add mushrooms and cook until golden. Stir flour into mushrooms and cook 1 minute.
Then add broth, sherry and rosemary.
Cook, stirring, until thickened.
Pour sauce evenly over chicken and artichokes.
Cover and bake in 375\u00b0 oven for 40 minutes.
Serves 4 to 6.
