Cucumbers In Sour Cream - cooking recipe
Ingredients
-
2 tsp. sugar
1 tsp. salt
1/4 tsp. black pepper
1 Tbsp. lemon juice
1 Tbsp. fresh dillweed, snipped
1/2 c. sour cream
1 medium onion, thinly sliced
2 c. thinly sliced cucumbers
Preparation
-
In large bowl, mix together sugar, salt, pepper, lemon juice and dillweed.
Stir sour cream into mixture.
Fold in onion and cucumbers.
Top with crumbled bacon.
Because salt draws liquid from cucumbers and will make the dressing too thin, I like to slice the cucumbers into a bowl of ice water and a little salt and allow it to sit for about an hour.
Then all liquid is drained off and the cucumbers are added to the dressing.
This makes the cucumbers crisp and the dressing stays the right consistency.
