Broccoli Soup - cooking recipe
Ingredients

1/2 c. butter
1 medium onion, chopped
1/2 c. flour
2 c. milk
2 or 3 cans chicken broth
2 c. grated mild Cheddar cheese
pepper
1 lb. cooked broccoli, drained
Preparation

Saute onion and butter until transparent.
Stir in flour and cook for 5 minutes.
Add milk slowly, stirring constantly.
Stir in grated cheese and blend until smooth.
Puree 1/2 of broccoli pieces in blender and leave rest of broccoli in pieces.
Slowly blend chicken broth into sauce.
Add puree and pieces of broccoli.
Stir well.
Simmer 15 minutes and add salt and pepper to taste.
