Stuffed Baked Potatoes - cooking recipe
Ingredients

8 potatoes or 4 large
vegetable oil
1/3 c. margarine
1/4 c. fresh chives or 2 Tbsp. dried
1 tsp. salt
1/4 tsp. pepper
1/3 to 1/2 c. evaporated milk
paprika
Preparation

Rub the potato skins with oil.
Bake at 400\u00b0 for 1 hour or until tender.
Allow to cool to touch.
Cut large potatoes in half or cut small portion off tops of smaller potatoes.
Carefully scoop out pulp, leaving a thin shell.
Mash potato pulp with butter, chives, salt, pepper and milk.
Add milk as needed. Carefully stuff potato shells.
Sprinkle with paprika.
Place on an ungreased baking sheet.
Bake at 325\u00b0 for 30 minutes.
Serves 8.
