Microwave Peanut Brittle - cooking recipe

Ingredients
    1 1/2 c. roasted peanuts
    1 c. sugar
    1/2 c. corn syrup
    1/2 tsp. salt
    1 Tbsp. butter
    1 tsp. vanilla
    1 tsp. baking soda
Preparation
    In a large microwavable bowl, mix peanuts, sugar, corn syrup and salt.
    Cook in microwave on High 6 to 7 minutes.
    Mixture should be bubbly and peanuts lightly browned.
    Quickly stir in butter and vanilla.
    Cook 2 to 3 minutes more.
    Add baking soda and stir quickly until mixture is foamy.
    Immediately pour onto a greased baking sheet.
    Let cool for 15 minutes or longer.
    Break into pieces and store in airtight container.
    Makes 14 to 16 servings.
