Rice Pudding - cooking recipe

Ingredients
    1 1/2 c. rice, cooked in 2 1/2 c. water
    3 egg yolks, beaten (reserve egg whites)
    1 c. sugar
    4 drops lemon extract
    1/2 stick butter
Preparation
    Combine egg yolks, sugar, cooked rice and lemon extract; mix well.
    Cook over low heat.
    Stir constantly until thickened.
    Add butter after removing from heat.
    Place in baking dish.
    Beat egg whites until foamy; spread on pudding.
    Broil for about 1 minute or until top is brown.
