Louisiana Shrimp Bake - cooking recipe

Ingredients
    1 c. celery, chopped
    1 med. onion, chopped
    1/2 c. green pepper, chopped
    1/4 c. margarine
    1/4 c. flour
    1-1/2 tsp. salt
    1 lb. tomatoes, stewed
    7 oz. frozen shrimp
    1/4 c. sherry
    1-1/2 c. Cheddar cheese, shredded
    4 eggs, hard cooked and chopped
    3 c. rice, cooked
Preparation
    Saute vegetables in margarine.
    Blend in flour and salt and cook until bubbly.
    Stir in tomatoes, shrimp and sherry.
    Bring to a boil.
    Simmer covered for 10 minutes.
    Stir in 1/2 cup cheese, eggs and rice.
    Pour in 2 quart casserole.
    Sprinkle with remaining cheese.
    Bake at 375\u00b0 for 25-35 minutes or microwave for 5-7 minutes.
