Spinach And Dill Rice(From "Vegetarian Epicure Ii") - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1 lb. fresh spinach, minced or 1 lb. frozen spinach
    2 cloves garlic, minced
    salt or soy sauce to taste
    pepper to taste
    1 tsp. dried dill weed
    2 Tbsp. wine vinegar
    3 c. cooked brown rice
    1 c. finely crumbled Feta cheese
    1 c. freshly grated Parmesan cheese
Preparation
    Heat olive oil in skillet and add fresh spinach (or thawed frozen spinach).
    Add garlic, salt or soy sauce, pepper dill weed and vinegar.
    Cook over medium heat about 10 minutes, stirring often.
    Add the cooked rice and toss until well blended.
    Cover and leave over low heat for 3 or 4 minutes.
    Toss together the 2 cups of cheeses.
    Sprinkle over rice mixture when served.
