Stuffed Peppers Neapolitan - cooking recipe

Ingredients
    4 large bell peppers
    1/2 c. olive oil
    1/2 to 1 c. toasted bread crumbs
    3 Tbsp. plus seedless raisins
    12 tsp. plus black pitted olives, chopped
    1 Tbsp. chopped basil
    1 Tbsp. chopped parsley
    1/2 tsp. salt
    1/2 tsp. pepper
    4 Tbsp. olive oil *
    1/2 c. tomato sauce *
    2 Tbsp. capers (optional)
    6 anchovies (optional)
Preparation
    Prepare peppers for stuffing.
    Mix stuffing (all ingredients except olive oil and tomato sauce*).
    Add more oil if this is dry. Stuff the peppers.
    Place stuffed peppers upright in deep baking dish.
    Pour oil over peppers and top with 1 tablespoon of tomato sauce for each.
    Bake in moderate oven (375\u00b0) for 1 hour.
    Serves 4, hot or cold.
