Scalloped Eggplant - cooking recipe
Ingredients

1 1/2 eggplant
1 Tbsp. butter
1 c. milk
1 egg
1 c. bread crumbs
2/3 c. grated Cheddar cheese
1 Tbsp. minced onion
salt and pepper to taste
1/3 c. grated Cheddar cheese for top
Preparation

Peel and dice eggplant.
Cook until tender, drain and mash. Butter a 1 1/2-quart casserole dish.
Beat egg, add all ingredients and mix.
Sprinkle the 1/3 cup of Cheddar cheese over top.
Bake at 350\u00b0 for 45 minutes to 1 hour.
