Pimiento Rice - cooking recipe

Ingredients
    1 c. rice
    3 Tbsp. lightly salted butter
    3 c. chicken stock
    1/2 c. finely chopped onion
    1 c. chopped pimiento
Preparation
    Saute rice in butter for 3 to 4 minutes, stirring often until golden.
    Stir in stock, onion and pimiento.
    Simmer, covered, 30 minutes until rice is tender and liquid absorbed.
    Serves 4 to 6.
