Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    2 Tbsp. oleo or butter
    1/2 c. milk
    1 beaten egg
    1/2 c. bread crumbs
    1 small can mushroom soup
    1/2 c. diced onion
    1/4 tsp. black pepper
    1 small jar chopped pimentos
    1/2 c. grated Cheddar cheese
Preparation
    Cook peeled and cubed eggplant in salted water until tender; mash and add remaining ingredients, except for the grated cheese. Pour into greased baking dish; sprinkle grated cheese over top. Bake 30 minutes or until brownish in color.
