Spinach Balls With Mustard Sauce - cooking recipe

Ingredients
    2 (10 oz.) pkg. frozen spinach, thawed and squeezed dry
    1 c. Parmesan, packed firmly
    4 small green onions, finely chopped
    2 c. herb stuffing mix, crushed
    1/2 c. butter, melted
    3 eggs, beaten
    1/2 c. dry mustard
    1/2 c. white sugar
    1/2 c. white vinegar
    1 egg yolk
Preparation
    Combine dry mustard and white vinegar.
    Let set for 4 hours at room temperature.
    Then mix sugar and egg yolk.
    Cook and simmer over low heat.
