Creme Brulee - cooking recipe

Ingredients
    nonstick cooking spray
    9 large egg yolks
    9 Tbsp. granulated sugar
    2 1/4 c. whipping cream
    1 1/2 tsp. pure vanilla extract
    1/2 tsp. freshly grated nutmeg or scant 1/4 tsp. packaged ground nutmeg
    12 Tbsp. dark brown sugar
Preparation
    Preheat oven to 275\u00b0.
    Spray 8 (4 ounce) ramekins with nonstick spray. Have two
    9-inch baking dishes ready.
