Thai Chicken Sate - cooking recipe

Ingredients
    1 English (seedless) cucumber, thinly sliced crosswise
    1 1/2 tsp. salt
    1 Tbsp. Thai green curry paste
    1/4 c. plus 1/3 c. well-stirred unsweetened coconut milk (not cream of coconut)
    4 medium, skinless and boneless chicken breast halves (about 1 1/4 lb. each), cut diagonally into 6 strips
    1/4 c. creamy peanut butter
    2 tsp. soy sauce
    1 tsp. packed dark brown sugar
    1/8 tsp. ground red pepper (cayenne)
    1/4 c. rice vinegar
    3 Tbsp. granulated sugar
    2 medium shallots, thinly sliced
    1 jalapeno chili, seeds and membrane discarded and minced
Preparation
    You will also need 12 (12-inch) bamboo skewers.
