Fried Salt Pork(Poor Man'S Chicken) - cooking recipe

Ingredients
    1 lb. streak of lean salt pork or fatback
    water
Preparation
    Select pork with a streak of lean in it.
    Use thick slices and cover with boiling water.
    Let come to a boil again.
    Remove from heat and pour off water. Fry until slices are brown and crisp. Drain on paper towel. Allow 3 or 4 slices per serving. Serve with green tomatoes or spoonbread or grits.
