Hot Potato Soup - cooking recipe
Ingredients

3 c. peeled Irish potatoes, chopped
3 c. onions, chopped
1 1/2 qt. chicken broth (canned or homemade)
salt and pepper to taste
1/2 to 1 c. cream
2 to 3 Tbsp. chives to garnish
Preparation

Put potatoes and onions in pot with chicken broth.
Season and bring to a boil.
Turn to low, partially cover and simmer until vegetables are tender.
Place mixture in small batches in blender and puree.
Put back in pot and add butter and cream.
Heat thoroughly but do not boil.
Garnish with chives.
