Double Corn Muffins - cooking recipe
Ingredients

1 1/4 c. flour
3/4 c. yellow cornmeal
1 Tbsp. baking powder
1 Tbsp. sugar
1 tsp. salt
2 eggs, slightly beaten
1 c. milk
1/4 c. melted butter
1 c. whole kernel corn, well drained
1 Tbsp. minced green onion
Preparation
-
Mix all together until lumps are out.
Spoon into large greased muffin cups.
Bake at 400\u00b0 for 20 to 25 minutes.
Each muffin is 146 calories, 4 gm. protein and 6 gm. fat.
Makes 1 dozen.
