Mustardy Oven Baked Chicken(Diabetic Or Regular Meats) - cooking recipe

Ingredients
    8 skinned chicken breasts
    salt and pepper
    1 egg or 1/4 c. egg substitute
    1 c. soft bread crumbs
    2 Tbsp. Grey Poupon Parisian mustard
    1/4 c. + 2 Tbsp. Parmesan cheese
    cooking spray
Preparation
    Sprinkle chicken with salt and pepper.
    Combine mustard and egg with a whisk until well blended.
    Combine cheese and bread crumbs and stir well.
    Dip chicken into egg mixture, then dredge in crumb mixture.
    Let stand at room temperature on waxed paper for 10 minutes to set coating.
    Bake at 400\u00b0 for 40 minutes or until chicken is done and coating is lightly browned.
