Sweet Potato Surprises - cooking recipe

1 (18 oz.) can sweet potatoes
1/3 c. milk
1 Tbsp. butter
1/2 tsp. salt
1/8 tsp. pepper
1 tsp. grated orange rind
4 marshmallows
1 egg, beaten
1 c. crushed cereal (flakes)
Preparation

Preheat oven to 425\u00b0.
In saucepan, place sweet potatoes, milk and butter; heat until butter is melted.
Mash potatoes.
Add salt, pepper and orange rind.
Form into 4 balls with marshmallow in center of each.
Be sure marshmallows are completely covered. Roll balls in egg, then in cereal.
Bake in pie pan for 20 to 25 minutes, or until crusty.
Makes 4 servings.
