Mexican Chicken And Rice - cooking recipe

Ingredients
    1 Tbsp. oil
    1 small onion
    1 green pepper
    1 c. salsa (desired strength)
    1/2 c. shredded Cheddar cheese or cheese of your choice
    1 lb. chicken breasts, cubed
    1 pkg. frozen sweet corn, thawed
    1 c. chicken broth
    1 1/2 c. Minute rice
Preparation
    Heat oil in skillet on medium heat. Add chicken, onion and pepper. Cook and stir until chicken is cooked thoroughly.
    Add corn, broth and salsa.
    Bring to a boil.
    Stir in rice.
    Cover and remove from heat. Let stand 5 minutes. Fluff with a fork. Sprinkle with cheese.
    Let stand, covered, 2 minutes or until cheese melts. Makes 4 servings.
