Grilled Chicken Breast With Black Bean Ranchero Sauce(Serves 4) - cooking recipe

Ingredients
    4 chicken breasts (6 to 8 oz. each)
    1 c. black beans
    2 bay leaves
    1 sprig fresh thyme
    3 Roma tomatoes
    1 Poblano chile, julienne
    1 red bell pepper, julienne
    1 yellow bell pepper, julienne
    1 medium yellow Spanish onion, julienne
    3 Tbsp. olive oil
    1/4 c. chopped fresh cilantro
    1/4 c. chopped garlic
Preparation
    Soak beans for at least two hours, preferably overnight.
    Cook beans in 3 cups of water, bay leaves and thyme.
    Simmer beans until tender, about 1 1/2 hours.
    Drain liquid from beans and remove bay leaves. Char the tomatoes over an open flame until black on one side.
