"Sinker" Dumplings - cooking recipe

Ingredients
    2 c. grated raw potatoes
    2 eggs
    1 tsp. salt
    1/2 c. fine dry bread crumbs
    1 1/2 c. flour (approximately)
    boiling, salted water
Preparation
    Rinse grated potatoes in cold water; drain well.
    Combine potatoes, eggs, salt, crumbs and enough flour to make a stiff dough.
    Using a wet spoon, drop tablespoons of dough into the boiling, salted water.
    Cook until the dumplings float to the top. Serve with roast pork.
    Use pork drippings and browned, minced/chopped onions over the top of the dumplings.
