Stir-Fry Chicken And Broccoli - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    1 1/4 lb. skinless, boneless chicken breasts, cut into 1-inch pieces
    2 c. broccoli florets
    1/2 lb. fresh mushrooms, sliced
    4 scallions, cut into 1-inch pieces
    3 Tbsp. soy sauce
    3 Tbsp. dry sherry
    1/2 tsp. ground ginger
    1 tsp. cornstarch
    2 Tbsp. water
    1 tsp. Oriental sesame oil
Preparation
    In a large frying pan or wok, heat oil over medium high heat. Add the chicken cubes and stir-fry 3 minutes, until chicken becomes opaque.
    Remove with slotted spoon and set aside.
    Add broccoli, fry for 1 to 2 minutes.
    Add mushrooms, scallions, soy sauce, ginger and sesame oil.
    Stir-fry 2 minutes.
    Add cornstarch, dissolved in water, and chicken.
    Cook until heated through and sauce has thickened.
    Serve over rice or angel hair pasta.
    Serves 4.
    Preparation time 20 minutes.
    Cooking time 20 minutes.
