Shrimp Elegant - cooking recipe
Ingredients

1 lb. shrimp
salt to taste
pepper to taste
1/2 tsp. tarragon
1/2 c. water
1/2 c. shallots
3 or 4 Tbsp. safflower oil
1 c. heavy cream
1 Tbsp. butter
1 Tbsp. mustard
Preparation

Clean and peel shrimp.
Heat safflower oil until hot.
Add shrimp and cook 1 minute on each side; remove.
Add to skillet the shallots and tarragon; saute a few seconds.
Add water and boil down.
Add heavy cream and reduce heat.
Add butter and melt. Add mustard.
(Do not allow to boil after mustard is added.)
Remove from heat. Add salt and pepper.
To serve, pour a little sauce onto each plate, then arrange shrimp in a nice design on top of each plate of sauce.
