Cream Of Cauliflower Soup - cooking recipe

Ingredients
    4 c. de-fatted chicken broth *
    1 whole cauliflower, washed
    1 c. chopped onion
    1/2 c. chopped celery
    1 stick margarine
    1/2 c. plain flour
    salt
    pepper
    1 c. cream
    1 c. milk
    2 pkg. frozen chopped spinach, thawed and drained
    2 c. shredded Cheddar
Preparation
    *To de-fat the chicken broth, place in the refrigerator until surface fat congeals, remove congealed fat.
