Eggplant Vegetable Medley - cooking recipe

Ingredients
    1 eggplant, peeled and chopped
    2 cloves garlic, minced
    1 Tbsp. oil
    1 green pepper, chopped
    3 tomatoes, chopped
    1 onion, chopped
    1/2 lb. fresh mushrooms, sliced
    1 tsp. salt
    1 tsp. dried sweet basil
    2 Tbsp. chopped fresh parsley
Preparation
    Saute eggplant and garlic in oil until lightly browned.
    Add remaining ingredients. Simmer 8 minutes or until tender.
    Yields 6 servings.
