Sweet Potato And Couscous Casserole - cooking recipe

Ingredients
    1 c. couscous
    1 c. boiling water
    1/4 tsp. salt
    2 sweet potatoes, peeled and cubed
    1 c. fresh or frozen green peas
    2 green onions, chopped
    2 Tbsp. butter
    2 Tbsp. maple syrup
    1 tsp. grated peeled fresh gingerroot
    1 Tbsp. sliced natural almonds
Preparation
    In medium size bowl, combine couscous, boiling water and salt; stir to blend, then cover tightly and set aside 5 minutes. Meanwhile, place sweet potato cubes in 2-quart microwave-safe casserole or bowl and add just enough water to cover cubes.
    Cover dish with lid or plastic wrap and microwave on High, 8 minutes, rotating dish after 4 minutes if microwave does not have a carousel.
    Uncover and drain potatoes.
