Spicy Vegetable Couscous - cooking recipe

Ingredients
    1 c. each chopped zucchini and summer squash
    1/2 c. chopped onion
    1 clove chopped garlic
    1 c. chickpeas
    2 Tbsp. chopped parsley (fresh)
    2 tsp. curry
    1 tsp. cumin
    1/4 tsp. red pepper flakes
    1 lb. firm tofu (optional)*
    3 c. cooked couscous
Preparation
    Saute vegetables (and tofu, if desired) over medium heat until just tender.
    Add chickpeas and spices, except for parsley.
