Lemon Curd Filling - cooking recipe
Ingredients

1/2 c. sugar
1 1/2 tsp. finely chopped mandarin peel
3 Tbsp. water
1/4 c. unsalted butter or lightly salted butter cut into 4 pieces
1 Tbsp. cornstarch
3 Tbsp. lemon juice
3 beaten egg yolks
Preparation

In a small saucepan stir together sugar and cornstarch.
Stir in the mandarin peel, lemon juice and water.
Cook and stir over medium heat until thickened and bubbly.
