La Madeline Tomato Soup - cooking recipe

Ingredients
    8 or 10 tomatoes, peeled and chopped or 4 c. canned tomatoes, crushed
    Parmesan cheese
    4 c. tomato juice or 1/2 chicken stock and 1/2 tomato juice
    12 to 14 basil leaves + more for garnish
    1 c. heavy cream or light cream
    1/2 c. butter (unsalted) or margarine
    1/4 tsp. cracked pepper
Preparation
    Combine tomatoes and juice in a large saucepan on medium heat.
    Simmer 30 minutes.
    Combine tomato and basil mixture in a blender or processor; do in small batches until smooth.
    Return to saucepan on low heat.
    Stir in cream and butter.
    Heat thoroughly. Garnish with Parmesan cheese and basil.
